Sweet potatoes roasted with coconut and quinoa
Ingredients
- Sweet potatoes
- coconut oil
- Quinoa
- coconut flakes
- Roasted cashew nuts
- Fresh herbs
- pears
- anise
- Cinnamon
preparation
- Peel the sweet potatoes and cut them into pieces or slices.
- Line a baking tray with parchment paper.
- Spread the sweet potatoes on the baking paper.
- Heat the coconut oil and spread it over the sweet potatoes.
- Bake at 220 degrees Celsius for approximately 25 minutes on the middle rack of the oven. Turn over halfway through.
While the sweet potatoes are baking...

- Prepare quinoa according to package instructions
- Gently toast coconut flakes and cashew nuts in a pan and set aside.
Peel the pears and cut them into pieces.
- Simmer pears with a little water, anise and cinnamon, then purée to taste or leave as is.
- Chop fresh herbs
- Take the sweet potatoes out of the oven
- Arrange on a serving platter
- Spread the quinoa over it
- Add coconut flakes, cashews, and fresh herbs.
- Serve together with the pear chutney and enjoy
