Today, unlike in the past when sugar was scarce, we find it almost everywhere: not only in sweets, baked goods, and soft drinks, but also as a flavor enhancer in products like mustard, sausages, and ketchup. Whole grains have increasingly given way to white flour. Sugar and white flour are quickly digested, rapidly creating cravings for even more readily available carbohydrates. According to Ayurvedic principles, sugar primarily disrupts Kapha and fat metabolism (Medha). This is accompanied by an excess of toxins (Ama). Kapha is particularly aggravated by the sweet taste (as explained above: the fast-acting carbohydrates). To improve blood sugar levels, reducing Kapha dosha and Ama is recommended.
