Shiitake mushrooms are rich in VitaminsShiitake mushrooms are particularly rich in vitamin B5. Pantothenic acid, or vitamin B5, is present in shiitake mushrooms – up to 2500 µg per 100g. This important vitamin is involved in carbohydrate metabolism in the human body and also in cholesterol synthesis. A vitamin B5 deficiency can cause symptoms such as stomach pain, fatigue, and paresthesia. These paresthesias manifest as numbness or tingling – sometimes even burning – in the feet.
Shiitake mushrooms also contain a large amount of Biotin – at least among meat-free foods. A 100g serving contains 15 µg of the vitamin. Biotin is an important component of various enzymes. It is relevant for the Amino acid and fatty acid metabolism and the activation of Energy reservesSymptoms of biotin deficiency can vary widely. Muscle pain, fatigue and drowsiness, skin rash, dizziness, or loss of appetite may occur. In some cases, a distorted perception of touch may also develop.
300g of shiitake mushrooms contain the recommended daily intake of 45 µg of biotin. This applies to adults as well as seniors, pregnant women, and breastfeeding mothers. Children and adolescents require slightly less biotin. Those who eat a varied diet usually meet their biotin needs without any problems. An overdose of vitamin B7 is not a concern – there is no clearly defined upper limit.
Since vitamin B7 is virtually inert, only minimal losses can occur due to heat. Furthermore, consuming shiitake mushrooms provides a significant amount of vitamin D.
