Shiitake mushrooms are rich in Vitamins. Vitamin B5 is particularly present. Shiitake mushrooms contain up to 2500 µg of pantothenic acid, vitamin B5, per 100g. This important vitamin is involved in carbohydrate metabolism in the human body and also in cholesterol synthesis. A vitamin B5 deficiency can be characterized by symptoms such as stomach pain, fatigue, and abnormal sensations. These abnormal sensations manifest as numbness or tingling—sometimes even burning—in the feet.
Shiitake mushrooms also contain a large amount of Biotin – at least among meat-free foods. A 100 g serving contains 15 µg of the vitamin. Biotin is an important component of various enzymes. Muscle pain, fatigue and drowsiness, skin rashes, dizziness, or loss of appetite may occur. In some cases, a distorted perception of touch stimuli may also occur.
300 g of shiitake mushrooms contain the recommended daily intake of 45 µg. This value applies to adults as well as seniors, pregnant women, and breastfeeding women. Children and adolescents need slightly less biotin. Those who eat a varied diet usually meet their biotin needs without problems. There's no need to worry about an overdose of vitamin B7—there is no clear upper limit.
Since vitamin B7 is virtually insensitive, only minor losses can occur when exposed to heat. In addition, eating shiitake mushrooms also provides a significant amount of vitamin D.
