Roasted sweet potatoes with coconut and quinoa

Sweet potatoes roasted with coconut and quinoa


  • Sweet potatoes
  • Coconut oil
  • Quinoa
  • Coconut flakes
  • Roasted cashew nuts
  • Fresh herbs
  • Pears
  • Anise
  • Cinnamon


  1. Peel the sweet potatoes and cut them into pieces or slices
  2. Line a baking tray with baking paper
  3. Distribute the sweet potatoes on the baking paper
  4. Heat the coconut oil and spread it over the sweet potatoes
  5. Bake in the oven on the middle rack at 220 degrees for about 25 minutes. Turn once halfway through.

While the sweet potatoes are baking...

  - Prepare the quinoa according to the package instructions
  - Carefully roast the coconut flakes and cashew nuts in a pan and set aside
  - Peel the pears and cut them into pieces.
  - Simmer the pears with a little water, anise and cinnamon and then Puree the flavor or leave it alone
  - Chop the fresh herbs
  - Remove the sweet potatoes from the oven
  - Arrange on a serving platter
  - Spread the quinoa over it
  - Add the coconut flakes and cashews as well as the fresh herbs on top
- Serve together with the pear chutney and enjoy
