Sweet potatoes roasted with coconut and quinoa
Ingredients
- sweet potatoes
- Coconut oil
- Quinoa
- Coconut flakes
- Roasted cashew nuts
- Fresh herbs
- pears
- anise
- Cinnamon
preparation
- Peel the sweet potatoes and cut them into pieces or slices
- Line a baking tray with baking paper
- Spread sweet potatoes on the baking paper
- Heat coconut oil and spread it on the sweet potatoes
- Bake in the oven at 220 degrees Celsius on the middle rack for about 25 minutes. Turn once halfway through.
While the sweet potatoes are baking...
- Prepare quinoa according to package instructions
- Gently roast coconut flakes and cashew nuts in a pan and set aside
- Peel pears and cut into pieces.
- Simmer pears with a little water, anise and cinnamon and puree to taste or leave as is
- Chop fresh herbs
- Remove sweet potatoes from the oven
- Arrange on a serving platter
- Spread the quinoa over it
- Add coconut flakes and cashews as well as the fresh herbs
- Serve with the pear chutney and enjoy
